Mutton Meal Eaten with

The main materials for the meal include rice, mutton,
carrot, onion and vegetable oil. There are many ways
to prepare it. Besides mutton, people also use the
meat of ox, horse or snow pheasant. Raisins, apricot,
walnut and other dried fruits are often applied to

The filling of the bun is top-quality mutton. It is
a favorite among the Uygur people. The features of
this bun include paper-thin wrapper and tender mutton
filling that is rich but not oily.
Cold Noodle
Also called Yellow Noodle by the locals, they are
a perfect snack in summer. They are made by mixing
the flour with local soda and fleabane ash solution.
The best soda is found in the reed of the Toksun County,
and the fleabane ash is produced in Turpan.
