Introduction |

Qinghai
Province is situated on the northeast of the Qinghai-Tibet
Plateau. It is named after the vast Qinghai Lake. The
provincial capital Xining is the eastern gate of the
Qinghai-Tibet Plateau and a natural summer resort. For
centuries, the Tibetan, Hui, Mongolian, Man, Tujia,
Sala, Han and other ethnic groups have lived here peacefully
and jointly created a splendid history and culture.
Their food is distinguished from other parts of the
country by its plateau ethnic feature.
Some of the special snacks are: Honey Dough Twists,
Roast Mutton, Fermented Glutinous Rice, Sweet Rice Wine,
and fried Chive-stuffed Dumpling. Famous local dishes
include: Chinese Caterpillar-Shaped Plant Stewed with
Snow Pheasant, Braised Camel Hump, Chrysanthemum Huang
River Fish, Lamb under Quilt, Roast Skewered Mutton,
etc.
