Named Bianjing in the ancient
times, Karfeng is one of the famous historical and cultural cities
in China. As far as cuisine is concerned, Karifeng preserves many
dishes handed down from ancient times, including the famous Henan
dish-Enclosed Four Delicacies. The dish goes like this: a quail
is put inside a dove, the dove inside a chicken and the chicken
inside a duck. All the poultry are free of bones and have rich
flavors. It is a great joy to visit Kaifeng and taste local dishes
like Carp and Heated Noodle, Dongpo Meat in Light Soup and Qixian
Sweet Potato Mash.
